Apple Sauce Pound Cake

Ingredients

  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ¼ cup North Coast Organic Apple Sauce
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • Pinch salt
  • ½ tsp cinnamon
  • Fresh berries and powdered sugar

Instructions

  • Preheat oven to 350˚F and grease a 9x5” loaf pan.
  • Cream butter and sugar with an electric mixer for 2 minutes, until light and fluffy. Add eggs and continue mixing. Add the apple sauce, vanilla and lemon zest.
  • In a separate bowl, mix together the flour, baking powder, salt and cinnamon. Slowly add to the wet mixture, mixing until just combined.
  • Transfer to loaf pan and bake for 45-55 minutes or until toothpick inserted in the center comes out clean. Cool completely before slicing.
  • Top with powdered sugar and berries before serving.
