Ingredients:

3 cups oat flour

1/2 cup dairy free yogurt

1/2 cup North Coast Apple Sauce

1/2 cup maple syrup

1 1/2 cups almond milk

2 apples, chopped

2 flaxseed eggs (2 tbsp flaxseed + 6 tbsp water)

2 tsp baking powder

1 tsp baking soda

1 tsp vanilla extract

1 tbsp North Coast Apple Cider Vinegar

2 tsp cinnamon

1/2 tsp ground ginger

1/2 tsp nutmeg

1/2 tsp allspice

1/2 tsp salt

2 tbsp coconut sugar

1 tbsp chopped pecans (optional for topping)

Yogurt Frosting Ingredients:

2 tbsp coconut yogurt

1 tbsp maple syrup

1-2 tbsp almond milk

Directions:

Preheat the oven to 375°. In a bowl add all dry ingredients and mix together (oat flour, spices, salt, baking powder, and baking soda). Then add wet ingredients to the bowl (yogurt, apple sauce, flaxseed eggs, maple syrup, almond milk, vanilla extract, and apple cider vinegar). Mix with a spatula until it becomes a thick batter. In a greased loaf pan spread half of the batter. Then spread half of the chopped apples and coconut sugar on top. Spread the rest of the batter and top with chopped apples, coconut sugar, and pecans. Bake for 45-60 minutes or until a toothpick comes out clean. Let cool before slicing, top with yogurt frosting, and enjoy!
